Caramel Apple Hand Pies
Today is a big day at the office, we have a baby shower to celebrate! To honor the occasion, the coworkers and I are throwing one of our signature potlucks. We like to do it up big. Especially big this time, because Mommy-to-be’s had such a great year. In the last 12 month’s she’s gotten engaged, married, upgraded to bigger digs, and is now just weeks away from welcoming a baby boy into this world. What a year.

It wasn’t long ago that I baked a batch of Apple Pie Cupcakes to send her and her then husband-to-be off on their nuptials. They’re big pie people and ditched the traditional wedding cake for an assortment of pies. So when it came time to make something for their little one on the way, these little Caramel Apple Hand Pies were a no-brainer. 

Caramel Apple Hand Pie Ingredients

You’ll need: 2 pie crusts (I swear by Martha Stewart’s Pâte Brisée), 3 granny smith apples, juice from a lemon, 1 teaspoon cinnamon, ¼ cup sugar, 12 soft caramels, 1 egg, 1 tablespoon water and crystal sanding sugar.

Start by preheating the oven to 375 degrees.

Next, on a lightly floured surface, roll out pie crusts to about ⅛-inch thick and cut out circles using a 3-inch circle cookie or biscuit cutter. Combine the scraps and keep rolling and cutting until the dough runs out. Each crust should yield at least 24 circles, for a total of 24 hand pies.

Next, make the apple filling.

Core, peel and dice granny smith apples. 

In a medium bowl, combine diced apples, cinnamon, sugar, lemon juice and toss around until apple pieces are evenly coated.

Drop a small mound of apple filling in the center of each little pie crust, about 1 tablespoon worth. Leave a clean edge for sealing the top crusts.

But before we get to that, we can’t forget about the caramels. Chop those up into small pieces.

Then drop a few on each pie for the wow factor.

Now comes the top crust. Take each remaining crust in your hands and stretch them out a little bit with your fingers. This is to make sure the top crust can fully cover the filling.

Before you drop the top crusts on, dip a finger in small dish of water and wet the edges of the bottom crust. Cover with top crust. 

Using a fork, crimp the edges to make sure each pile is sealed, but really it’s because it’s prettier this way.

Make an egg wash by whisking together an egg and tablespoon of water. 

Brush the egg wash on each pie.

Cut two small slits on each pie, then sprinkle with sanding sugar.

Bake the pies for 15 to 20 minutes, or until golden brown.

And voila! The perfect little apple pie enclosed in a handheld flaky crust. All of the things you love about apple pie in a more potluck-friendly form. I can’t wait to share these with my coworkers and hope Mommy and the little one love them.

  13. For the finishing touches, cut two small slits on each pie, then sprinkle with sanding sugar.
  14. Bake the pies for 15 to 20 minutes, or until golden brown.
