Chocolate Cinnamon Bread

Some weeks are rougher than others. This week will be one of my toughest. Yours truly will be working the overnight shift tonight (and probably again tomorrow) thanks to the impending government shutdown. Love you, Congress. So for some very obvious reasons, I’m not very happy today, but I didn’t let that stop me from sharing my usual Monday recipe. What it does mean, however, is I’m doing away with the usual slew of step-by-step pictures. Consider this Just Get It Over With Monday.

Recipe for this very dark, very moist and very chocolatey chocolate cinnamon bread (courtesy of Starbucks) after the jump. It’s a good one.

  1. 1 ½ sticks unsalted butter, room temperature
  2. 1 ½ cups granulated sugar
  3. 2 large eggs, room temperature
  4. 1 cup flour
  5. ½ cup dutch processed cocoa
  6. 1 ½ tsp ground cinnamon
  7. ½ tsp salt
  8. ¼ tsp baking powder
  9. ¼ tsp baking soda
  10. ½ cup buttermilk
  11. 2 Tbsp water
  12. ½ tsp vanilla
for the topping
  1. 1 tsp granulated sugar
  2. 1/4 tsp cinnamon
  3. 1/4 tsp dutch processed cocoa
  4. pinch of ground ginger
  5. pinch of ground cloves
  6. 2 tsps sparkling sugar
  1. Preheat oven to 350 F. Line a loaf pan with parchment paper.
  2. In the bowl of a stand mixer fitted with paddle attachment, mix the butter and sugar until light and fluffy.
  3. Add eggs, one at a time, mixing until each is fully incorporated. Scrape down the sides of the bowl if needed.
  4. In a medium bowl, sift together flour, cocoa, cinnamon, salt, baking powder and baking soda.
  5. In a separate bowl, whisk together the buttermilk, water and vanilla.
  6. With your mixer on low speed, begin adding the contents of each bowl to the butter mixture, alternating between the two, beginning and ending with the dry mixture.
  7. Pour batter into paper-lined pan.
  8. Sprinkle sparkling sugar over the batter.
  9. Combine the granulated sugar, cinnamon, cocoa, ginger and cloves in a small bowl, and sprinkle onto layer of sparking sugar.
  10. Bake for 45 to 50 minutes until a toothpick inserted in the middle comes out clean.
  11. Let rest in pan for 10 minutes, then turn out onto a rack to cool.
  12. Enjoy!

    if this is what you’re making in the face of a government shutdown, then i welcome it with open arms 😉

    so sorry to hear that you have overnights :( if you have time, you should watch some clips from the daily show and colbert report to make you smile! they have made fun of this shutdown in appropriate fashion.
