Easy Peach CrispsA recipe post! Finally. And to mark the occasion and my first food post as a Georgia resident, I made something with peaches, because of course. The peach part was easy. The challenge was making something not horribly bad for us (we ate a lot of great food over the weekend and I know I’ll be paying the price on the scale this week), and something that wouldn’t take too much effort (we had enough other housework to keep us busy). So, with the above criteria in mind, the idea for an easy, portion-controlled peach crisp for two was born. The results were quite satisfying, but the real accomplishment here is that I actually pulled off blogging about it. High fives all around. 

Easy Preach Crisp Ingredients
The cast of characters: 2 peaches, ½ teaspoon cinnamon, 1 teaspoon sugar, 4 teaspoons flour, 2 tablespoons brown sugar, 2 tablespoons oats and 1 tablespoon butter. Very easy. 

Spoiler alert: The flour you’ll use in two stages. First, you’ll need 1 teaspoon to toss the peaches in and the other 3 are for the brown-sugar-oat crumble. 

Sliced Peaches
To get started, preheat the oven to 375 degrees, spray two ramekins with baking spray and set aside. 

Next, clean and slice peaches. Keep the skins on or take them off. I like mine on because I like the color, but also, a little fiber never hurt anyone. 

Making Peach Crisp
In a medium bowl, or a very crowded small bowl, toss peaches with cinnamon, sugar, and 1 teaspoon of the flour until evenly coated.

Next, divide the peaches evenly between the two ramekins. 

Peach Crisp Crumble
And in another bowl or the same bowl from before, combine the brown sugar, oats, and rest of the flour.

Add in the butter, and using either your fingers, fork or spoons, cut in the butter until the mixture takes on a crumbled texture.

Crumble the topping over peach mixture and bake for 15 minutes or until golden brown.

And just like that you’ve made a reasonably healthy, quite tasty and very easy dessert for two. It helped mark the perfect end to our first Atlanta weekend together, and I promise you don’t have to live in the Peach State to appreciate it.
