Easy Fried Tortellini

Wow, you guys. It’s been two whole months since I last posted a Fryday recipe. That ain’t right. In my defense, I need to stay away from fried food, but if I’m being perfectly honest, it’s been a matter of poor time management. Now that I’ve gotten over the initial sadness of Brian moving to Atlanta, I suddenly have all this newfound free time, and you know what that means, more Frydays!

To get back in the swing of things, I’m sharing an easy step-by-step guide for making crispy, cheesy, fried tortellini. It’s everything you love about tortellini, but eat-it-with-your-fingers better.

Fried Tortellini Ingredients | fortune goodies
The cast of characters: store-bought tortellini (I went with Spinach Cheese, because somehow that seemed healthier), ½ cup flour, 2 eggs, 1 cup panko crumbs, ½ cup parmesan, 1 teaspoon Italian seasoning, oil for frying and marinara sauce for dipping.

Parmesan
For the parmesan, I like using the already grated packs from the store, but because the pieces are a little longer than appropriate, I give them a quick chop in my handy little immersion blender food processor.

Cooking Tortellini
Cook the tortellini according to the package instructions.

Tortellini Dipping Station
As the pasta is cooking, prepare your three dishes for the panko coating. The flour goes in one dish, the beaten eggs in the second, and a mixture of panko bread crumbs, parmesan and italian seasoning in the third.

Prepping Fried Tortellini
Once the pasta’s ready, start the dipping process. Cover first in the flour, dip in the eggs, then coat in the breadcrumb mixture. Set aside and keep it up until each piece is nice and covered.

Tortellini ready for frying
Next, heat between ¾ and 1 cup oil in a skillet until hot enough for frying. You’ll know the oil is ready when a dash of flour sizzles and spits back at you.

Frying Tortellini
Fry in batches until golden, flipping halfway through. Remove tortellini from pan and place on paper-towel lined plate. Repeat.

Serve with marinara sauce. And that’s it!
