After several weeks of several trips to Chipotle (my record is 5 times in the same week), this girl needs to get her act together. I’m going back to the motherland for most of July and I’d like to leave the American pounds on this Chinese figure behind.* That’s where this green juice/smoothie comes in.
I first started experimenting with smoothies and such back in January when I bought my blender. January held such healthy promises, very naive ones too. During that time, I came to love this particular combination of spinach ice cubes, green apples, bananas, coconut water and almond milk. No sweetener needed. My sister Kate (not my real sister) taught me the neutralizing powers of bananas, so that’s the MVP here. Thanks, sis!
Another important player: the spinach ice cubes. Freezing puréed spinach is a really handy trick, especially if you’re like me and buy your spinach in outrageous quantities from Costco. Throw some fresh spinach in the blender, pour in a little bit of water to help with the process, blend, and freeze. Spinach waste solved.
One glass of this juice calls for 3 cubes and the rest is pretty self-explanatory. Bonus: one tall glass is only 1 Weight Watchers point. Drink up!
*I know this probably won’t be happening, but it’s worth a try and I hope this helps.
- 3 spinach puree ice cubes
- 1/2 cup pure coconut water
- 1/2 cup unsweetened almond milk
- 1 green apple, cored with skin on
- 1 banana
- Place ingredients in blender.
- That's it!
