It is with immense joy that I share today’s appropriately titled Fryday recipe from the comfort of my home sweet home in Aurora, Colorado. Brian and I are here for the long weekend, and it just so happens that my dearest Rohini is also making the trip home, And get this, it’s her birthday on Sunday, AND I’ll get to meet her boyfriend, because he’s coming too! I literally, and I mean literally, cannot contain my excitement right now.
So before I go jumping on Brian’s bed in the guest room, because yes, we sleep in separate rooms in the Yang house, let me share with you this great and stupidly easy recipe for oven-baked home fries. Thus completing recipe recap part 3 of 3 of our homemade Salmon Eggs Benedict and Bloody Marys brunch. There’s just so much to be happy about. TGIFryday.
Home fries, or breakfast potatoes, are quite truly one of my favorite foods. I’m a lover of potatoes and love them best when they’re of the red variety with the skins still on. I love them with a little bit of a kick and I love them matched with the sweetness of red bell peppers and flavors of garlic and onion. Basically, it doesn’t get any better than when they’re in home-fries form, and this recipe really truly couldn’t be any easier to throw together.
You’ll need: 2.5 pounds of red-skin potatoes, olive oil, rosemary, thyme, garlic powder, salt, pepper and paprika.
Not pictured: the onion and red bell pepper, because I can be very forgetful sometimes, especially when looking forward to trips back home.
To get things going, chop the potatoes, skin on, and chop the red bell pepper and onion up too.
Throw all of the ingredients into a big bowl. Toss everything around coating the vegetables with oil and spices. Place on a nonstick baking sheet and bake at 500 degrees for 25 to 30 minutes until golden and crispy.
And voilà! True made-at-home, crispy yet tender home fries to serve with your favorite breakfast foods. You know where to find mine.

- 2½ pounds red potatoes, skin on and cubed
- 3 tablespoons olive oil
- 1 red bell pepper, seeded and chopped
- 1 medium onion, chopped
- ½ teaspoon rosemary
- ½ teaspoon thyme
- ½ teaspoon garlic powder
- 2 teaspoons paprika
- ¾ teaspoon salt
- ¾ teaspoon black pepper
- Preheat oven to 500 degrees.
- Combine all ingredients in a big bowl and toss together until pieces are evenly coated in spices and olive oil.
- Transfer contents to a nonstick cookie sheet.
- Bake for 25-30 minutes, turning home fries halfway through.
- Serve hot.
- Makes 4 to 6 servings.
