Chewy Lemon Sugar Cookies | Fortune Goodies

After sort of complaining about how difficult it was to make these sugar cookies with royal icing yesterday, I thought I’d share these more traditional drop sugar cookies for this week’s throwback.* Traditional with a twist. Lemon twist.

Give these a try if you like your cookies zesty, soft and easy. Recipe after the jump.

  1. 2¾ cups all-purpose flour
  2. 1 teaspoon baking soda
  3. ½ teaspoon baking powder
  4. ½ teaspoon salt
  5. 1 cup butter, softened
  6. 1½ cups white sugar
  7. 1 egg
  8. ½ teaspoon vanilla extract
  9. Zest of one large lemon, finely minced
  10. 4 Tbsps fresh lemon juice
  11. ½ cup sugar for rolling cookies
  1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
  2. In a small bowl, stir flour, baking soda, baking powder and salt. Set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter and sugar until light and fluffy.
  4. Next, beat in egg, vanilla extract, lemon juice and lemon zest.
  5. Gradually blend in the dry ingredients.
  6. Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1½ inches apart.
  7. Bake 8 to 10 minutes or until lightly browned.
  8. Let stand on cookie sheet two minutes before removing to cool on wire racks.
  9. Enjoy!
