Piña Colada Smoothie

Piña coladas. I love them so much. So it was only a matter of time before I started drinking them for breakfast. Of course, I’m talking about virgin piña coladas, but even then, making the drink morning-friendly required a few adjustments like dropping the maraschino cherries in favor of vanilla greek yogurt. Follow along and join me in getting the fiestas started a little earlier in the day.

You’ll need: ice, vanilla greek yogurt, pineapple chunks, a banana, coconut milk and honey to taste.

After you’ve gathered the ingredients, the next hardest thing is the blending, but it’s ok, I’m here to walk you through it. Pay close attention.

Throw the ingredients into a blender and blend until smooth.

And there you have it, a refreshing, sweet but not-too-sweet piña colada-inspired smoothie that you can whip up with ease and without the usual sugary, slushy guilt that follows. 

Still, I love me a normal virgin piña colada, so much so that I think I might request one at dinner tonight while the adults (my parents and Brian) order real drinks. Can’t wait to see them. Cheers!

Ingredients
  1. 2 cups ice
  2. ½ cup vanilla greek yogurt
  3. ¾ cup unsweetened coconut milk
  4. 1 cup pineapple chunks
  5. 1 banana
  6. 1 tablespoon honey, or more to taste
  7. ⅛ teaspoon vanilla
Instructions
  1. In a blender, combine ice, yogurt, coconut milk, pineapple, banana, honey and vanilla.
  2. Cover and blend until nearly smooth.
  3. Taste and add more honey if desired.
  4. Enjoy!
