I love coconut water. I love it so much that I, no joke, looked into attaching myself to a coconut-water IV drip. Turns out it’s a thing (number 8 on this list), and all of a sudden I felt a lot less lonely in this world.
Then I remembered that in my many conversations about the electrolyte-rich thirst quencher, I found that a lot of people really don’t like the stuff, my boyfriend and brother included. I couldn’t believe it, although I do have a theory.* But before I bore you with conspiracies, let me just say that I hold a glimmer of hope that people can become coconut-water converts, and I’m crossing my fingers that smoothies like this one might do the trick.
My brother tells me that to him coconut water tastes salty. I don’t get that at all, but with his palate in mind, I added a few fixings into my usual plain coconut water routine.
To make this particular smoothie, I blended a cup of coconut water, a half cup of frozen raspberries, a few ice cubes, and some honey for added sweetness.
That’s it! Adapt it to your own tastes and enjoy. Think of this more as a springboard for including coconut water in your smoothies, and less like a recipe that you need to follow exactly.
*Oh and as for that theory of mine. I’ve noticed that the same people who’ve said they don’t like coconut water, like Kombucha. Whereas I can’t stand that grossness. So maybe there’e some kind of enzyme something or other to explain all of this? Maybe? All I know is I’m convinced there’s something there.
- 1 cup coconut water
- ½ raspberries fresh or frozen
- ice cubes
- honey or sweetener to taste
- Combine coconut water, raspberries, ice and sweetener in a blender and blend.
- Adjust sweetener to your desired taste.
