For the first time in a long time, I didn’t go out of town over the weekend, and it was amazing. Not only did we make time for dinners with friends, a great Yom Kippur service at Hill Havurah (if you’re looking for a DC synagogue, I’ve found their services to be extremely welcoming to Hebrew illiterates like myself), and boring but crucial things like dry cleaning and chores, I actually had time to make something for the blog (!). It’d been too long.
Now, with that said, I didn’t have that much time and still needed something simple and low-key to take to our friends who had so graciously invited us over for dinner. I knew we were having short ribs (so good! and so not healthy), and figured a dessert on the lighter side would do us all a favor. That ruled out cupcakes and cheesecake, but left the door wide open for panna cotta with fresh berries and berry sauce, and I walked right through it. Join me, please.
I’m going to let you in on a little secret. My all-time favorite dessert is homemade whipped cream and berries.
If you’ve made whipped cream before, this information might come as a bit of a shock. But Yang, you write a food blog with over-the-top desserts like Matcha Green Tea Sugar Cookies and Churros con Chocolate Cupcakes! Desserts that actually require baking! Surely you like those better than something as simple as homemade whipped cream?!
You’d be right to scratch your head, but the heart wants what the heart wants, and mine craves fresh summer berries and a light, slightly sweet whipped cream more than anything else. Lucky for me, it’s quite possibly the easiest thing to throw together, so I have it quite a lot. If you have yet to try whipping up your own, here’s how I like to make mine.
On this last Thursday of summer, I’m taking the opportunity to squeeze in a banana cream pie recipe for today’s throwback*.
After the weekend, things will be looking a whole lot more pumpkin and cinnamon around here. I know I’ve complained quite a lot about summer coming to an end, but promise to embrace the new season once it’s officially here. Until then, indulge me and let me share this deliciously banana and decidedly summer pie.
I’m hanging on to summer for dear life.
Now don’t get me wrong, I adore fall. I love the sweaters, the cinnamon, the few pounds of acceptable weight gain, and taking only one shower a day. I typically have no problem with the summer-to-fall transition, but am finding myself struggling with it this year. I don’t want to let go of the late sunsets, the weekends away and the nights without homework, but I suppose all good things must come to an end. I’m seeing to it that they go out with a bang.
These strawberries & cream cupcakes, dressed in the most summery cupcake liners I could find, are part of that endeavor.
