Calling all green tea lovers! Have I got a treat for you. Green Tea Frosting made with always delicious cream cheese, that’s what. Frost your cakes with it, pipe it over your cupcakes, eat it by the spoonful, do whatever you want, just make sure you make it.
Come to think of it, green tea strangers should pay close attention as well. This stuff is so good that I’m convinced it’ll be your gateway into the big and beautiful green tea world that awaits you. I’m in way deep myself, so please trust me on this one and join me for the ride. You’ll never want to look back.
Happy Monday, friends! I hope you had a great weekend. Mine was unabashedly lazy and uneventful, and it was amazing. I even managed to fit in two naps. After a workweek that seemed like it would never end, the weekend was just what I needed.
Part of last week’s disorderliness was due to the cupcakes you see before you. As the resident baker, work birthdays can be quite the burden, but the pleasure I get from making something special for a special someone’s day exceeds the inconvenience of finding the time to do so. For now, anyway. Sometimes, the hardest part is figuring out what to bake, and in this case, with the birthday girl celebrating a 5 at the end of her new age and with a baby on the way, I knew it had to be something grand.
While “Chocolate Banana Cupcakes with Nutella Frosting” may be the title of this post, the unabridged name for these babies is “Chocolate Banana Cupcakes with Nutella Cream Cream Frosting, Hazelnuts and Caramel.” With the birthday girl eating for two, and me baking for 24, the long, grandiose name seemed only fitting.
I abstain from coffee, just as I do with alcohol and soda. Add to that my love for the Love Taza blog and guilty-pleasure viewing of TLC’s Sister Wives and I might as well be Mormon. Brian has chosen other plans for me. Emphasis on “chosen.”
As much as I can’t stand coffee, my friend Kate loves the stuff. I’m talking obsessed. So when it came time to bake something for her 25th birthday, I knew some sort of coffee confection needed to be involved. That’s how good of a friend I am. I’d like to think these mocha cupcakes with salted caramel frosting (another one of Kate’s loves) took me from good friend to greatest.
Here in DC, we have ourselves yet another one of those “you call this snow?” snow days that I can’t partake in. Staying home for inclement weather, no matter if it’s snow or even a hurricane, is not an occupational hazard/perk of working in tv news. Add to that the fact that I’m a Colorado girl by way of Montreal who isn’t impressed unless it’s up to my knees, and you’ll understand why I might not be having the best of Mondays. Sitting in the office. Working.
But enough with the pity party. I have yet to come across a baked good that didn’t cheer me up, and lucky for me, I have quite a few of these churro cupcakes waiting for me at home. So I’m good. I don’t know if it’s the cinnamon cream cheese frosting or the chocolate filling, or the fact they’re reminiscent of my time in Barcelona, whatever it is, they’re pretty incredible, and I hope you give them a try. They tell me baking makes for a great snow day activity.
Hot beverages, staying home and binging on “Homeland” were all I could be bothered to think about this weekend as I did my best to take shelter from DC’s now undeniable winter. Green tea lattes and hot chocolate happened to play a very large part in that effort, so I thought now would be a great time to share my recipe for hot-chocolate cupcakes.
I made these for an office birthday after racking my brain for days for ideas. My coworkers aren’t easily impressed, you see, but then I remembered an adage of mine: when in doubt, stuff a cupcake. It’s a strategy that never fails.
After Monday’s rather epic photo post, I’m skipping this week’s Pic Me Up in favor of cupcakes. I just know that I can’t follow the President with yet more pictures of cheese fries. I prefer my odds with chocolate cupcakes.
These light-on-the-chocolate chocolate cupcakes are perfect for those times where you’re craving a dose of chocolate, but don’t want to commit to the richness of devil’s food cake. They’re also perfect for when you have one recipe in mind, and an hour before a holiday party, realize your chocolate-chip supply isn’t what you thought it was. Guess which one of those scenarios applied to me on Saturday night.
