Halfway Homemade Firecracker Popsicles
My sincerest apologies for not publishing my usual Monday post sooner. It’s just been one of those days, you know? The same goes for last night thanks to a New York to DC drive that took twice as long as it should have. And to prove that I’m not a complete slacker and work a full-time job that can be quite demanding, here’s the video evidence.

Anyway, with that explanation out of the way, I want to share a stupidly easy halfway homemade recipe for Firecracker popsicles. You know the kind. Red white and blue and delicious all over. As you can see, these popsicles are on the monochromatic side, but the all-natural ingredients and no-fuss process more than make up for the lacking blue pigment.

Fried Ravioli
Remember last Thursday’s impossibly easy slow-cooker Pasta e Fagioli? Well, these here cheesy, crunchy Fried Ravioli go great with the stuff. And like the soup, fried ravioli are all eat with none of the sw- that usually precedes it.

There are few things that I love more than Fryday recipes, but halfway homemade Frydays would have to be one of them. Use store-bought ravioli and this stuff will come together in no time. Let’s get to it.

Banana Split Cookies
I don’t know about you, but I measure the success of my weekends not by hours slept or tasks accomplished, but by the food consumed. How was yours?

At the onset, mine wasn’t looking so promising. Nine hours of Saturday class plus a few more for schoolwork will do that. But before I could throw in the towel, Brian and I managed to share a great Italian meal with friends at Lavagna on Capitol Hill (get the Bolognese), and I still found the time to make a batch of amazing, halfway homemade, busy-schedule-friendly Banana Split Cookies.

My luck turned around, and the weekend was a smashing success.

Banana Cream Cookies

Happy Martin Luther King, Jr. Day! I hope you have the day off from work. I did until I decided to pick up the weekend-duty shift. I’m regretting that now just a little because I didn’t tackle everything on my to-do list, but I could definitely use the comp day. And if there’s anything I’ve learned in my two-and-a-half years of business school it’s that “required” reading is optional at best, at least with my GPA.

Less optional are these banana cream cookies. I’m telling you, if you’re a fan of bananas, cookies or deliciousness, you need to make these and try them for yourself, no occasion needed. Although I’ll admit I made my batch with one in mind. You see, Brian was away all weekend with his family in the Bahamas, and he comes back tonight. Banana cream happens to be one of his favorite flavors, so I made these as a sort-of welcome home gesture. But before you start thinking that I’m some kind of good girlfriend, I’ll have you know that as soon as he tells me how much he loves them, I plan on telling him that the next time he leaves me behind I won’t be saving him any.

So yeah, I’m probably not in the running for any best girlfriend awards. But these cookies. Oh these cookies. They deserve some recognition.

Fried Cinnamon-Sugar Biscuits

When holiday potluck number 5 rolled around, I was hurting. Having a food blog comes with certain expectations that one feels pressured to meet. Add to that final exams and a wacky work schedule, and I found myself making cupcakes at 2am one night and baking cookies at 6am the next morning. I was on an unsustainable path.

Luckily, I have no qualms about getting a little help from the Pillsbury Doughboy from time to time, and these halfway-homemade fried cinnamon-sugar biscuits with a cream-cheese sauce came to the rescue.

Banana Cream Cupcakes

Isn’t December just so exhausting? The shorter days, dreary weather, and gift-shopping can really take it out of you. All I ever want to do when I get home is get into one of my many pairs of leopard-print pajamas and call it a night. And while I do often go through with such exciting plans, there are those other nights where I find myself needing to prepare something for Holiday Party Number (fill-in-the-blank-too-many). So what’s a girl to do when she wants to be lazy and still wow at the next potluck?

How about some halfway-homemade banana cream cupcakes? Yeah that should do.
