Greetings from New York City! Late Friday afternoon, I got a call summoning me to work out of our main office for the week and I jumped at the opportunity. New York in the fall is my favorite, and made all the better on the company expense account. While here I’m making a point of seeing some of my favorite people and eating at some of my favorite restaurants, and hope to share a food diary later this week. Until then, you can check out some of my recommendations from my trip to New York this time last year.
Second to New York, my next favorite things about this season are pumpkin baked goods, especially of the homemade variety. Without further ado, follow along for Mini Chocolate Chip Pumpkin Muffins that capture all of my favorite fall flavors in convenient, sugary bite-sized servings.
I absolutely adore muffins. In fact, I might even like them more than I love cupcakes. And yet these here Banana Macadamia Muffins are only the second breakfast-pastry recipe on this blog (these were the first). Not okay.
On weekdays, I get my cereal from the pantry at work. On weekends, I sleep in and often skip breakfast altogether. That needs to change, because (1) they really do mean it when they call it the most important meal of the day, and (2) because there’s just too much good food to make and enjoy that cannot be confined to two sittings. Easy, grab-and-go muffins are the new way forward.
Muffins are my breakfast guilty pleasure. Add blueberries to the muffins and I’ll feel a little less guilty. Make this better-for-you blueberry muffin recipe and you’ll hear me ask, “What guilt? Pass me the muffins.”
That’s because these blueberry beauties are made with fat-free milk and non-fat greek yogurt, and use only half of the butter called for in most recipes. Now to be fair, when I say “most recipes,” I can really only speak for this one Paula Deen (too soon?) recipe that reads like a heart attack, but that’s neither here nor there.
So yeah, I’m no nutritionist, but even I know that less fat means fewer worries and more of these muffins with blueberries (I’m on this weird almost-rhyming kick, sorry). Recipe after the jump.
