coconut macaroons

In honor of Rosh Hashanah, I thought I’d bring back these coconut macaroons for this week’s throwback* post. They’re really more of a Passover dessert, but who wants to wait that long?

If you’re a big coconut fan like me (check out these cupcakes), you’ll love these. The recipe is one of Martha Stewart’s best and makes for a great go-to if you need to whip up something quick and pretty for your next dinner party. One bag of shredded coconut is enough for two batches, so give both the vanilla and chocolate varieties a try. You only live once.

Mint Chocolate Chip Ice Cream

July is National Ice Cream Month. It is not July anymore. Still, I thought I’d share this throwback* ice cream post before I let August slip out from under me too. Better to be one month late than two, right? 

I’m a lover of all ice cream flavors, but mint chocolate chip is my absolute favorite. I love that it’s simple, crunchy from the chocolate and the mint flavor is that much more refreshing because it’s cold.

Smores Cupcakes

For a baking blog with a cupcake logo, you’d think I’d have a lot more than just three cupcake recipes on here, but I don’t. This throwback* post brings that grand total to four. Four is still a far cry from a baker’s dozen. Slowly but surely, I will get there. 

These s’mores cupcakes are a good place to start. Similar to the peanut butter cup cupcakes, you can make these as easy or complicated as you want. Use a box mix for the cake part, or make your own. Either way you’ll have something you can be proud of, because the graham cracker crust and marshmallow tops are plenty impressive already.

On this particular day, I went with a box mix. Saving my concentration for the torched marshmallow tops, specifically avoiding burning down my apartment while torching said marshmallows, felt like a better use of my time. 

And yes, these things are as delicious as they look. Between the graham cracker bottom, chocolate cake, and toasted marshmallow frosting, there’s nowhere to go wrong. Recipe after the jump.

Caramel Corn

I’m going to Bethany Beach this weekend, and one of the things I’m most looking forward to is paying a visit to Fisher’s Popcorn, famous for its caramel and white cheddar popcorn. 

Two years ago, I made the mistake of coming back to work without a big tub of the stuff. Luckily for me and my coworkers, I quickly redeemed myself by making my own caramel corn and did so quite successfully. Still, I’ll make sure I grab some Fisher’s this weekend, because as much as I enjoyed making my own, the time savings from buying the stuff pre-made directly translates to more time at the beach.

Soft Pretzels

I don’t post enough ​savory things, and that doesn’t make sense because my penchant for sodium is about as strong as my sweet tooth. This throwback* post on soft pretzel bites is my attempt to balance things out a bit.

Judging by the big chunks of salt in the picture, it oughta do the trick.

funfetti cupcakes

My best friend Rohini comes to town tomorrow and I cannot wait. Today’s throwback post is in her honor.*

Almost exactly two years ago (it seems like only yesterday), we made her favorite Pillsbury funfetti cupcakes, but we made them from scratch. As these homemade things tend to go, it took several more steps and many more minutes, and we didn’t mind. Baking with your long-distance best friend while reminiscing about the old days in between spoonfuls of frosting is a beautiful thing. It should be savored, and spending a little or a lot more time in the baking process is fine by me.
